Yup. There's AMQP dissector shipped with Wireshark. I've used it with 
RabbitMQ on top of AMQP 0-9-1 and it seemed to work well. With AMQP/0-8 
you may encounter some problems as few command IDs were changes between 
versions 0-8 and 0-9. Still, it should dissect most of the commands 
correctly.
