Thanks for your feedback. Since I posted this issue I've found out that instead of the 16 updates being installed on 1 node in the cluster, 27 updates were installed include an update to rabbit which explains the problem.
I'm now in the process of attempting to rollback those updates and re-install the previously installed version of rabbit - wish me luck!

Recent versions of RabbitMQ required all clustered nodes to be upgraded simultaneously. Make sure this is not the problem you are running into by ensuring that the beam files are identical across all clustered nodes.

Check whether any servers have multiple instances of Erlang installed.
Your check would not be valid if multiple instances are present.
