Just wanted to feedback that this is working perfectly for us, thank you.
Any idea when the Consistent Hash Exchange will cease to be marked as experimental?

You might want to try this:
http://www.rabbitmq.com/releases/plugins/v3.0.1-hash-headers/
(Drop it in your plugins directory, move the original consistent hash plugin out of the way, and restart.)
Declare a consistent hash exchange with a string argument called "hash-header", naming the header you want to use instead of the routing key.
This functionality should make its way into future releases.
