See the AMQP spec, e.g. the field list as described in 
http://www.rabbitmq.com/amqp-0-9-1-reference.html#class.basic

Applications can generally use these in any way they like; Rabbit only 
pays attention to the delivery-mode and user-id fields (see 
http://www.rabbitmq.com/extensions.html#validated-user-id for the latter).
